These delicious and healthy muffins are sweetened naturally by banana and maple syrup and loaded with the goodness of Diamond pro+ 3!

Makes 12 muffins

Ingredients

  • 1 ¾ cups wholemeal flour
  • ⅓ cup rolled oats, plus more for sprinkling on top
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 cup mashed ripe bananas (about 2-3 large bananas)
  • 1 level scoop Diamond pro+ 3, prepared with 60 mL water
  • 2 eggs
  • ½ cup maple syrup or honey
  • ⅓ cup extra virgin olive oil
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 180 degrees Celsius (fan forced). Grease muffin tray or line tray with liners and set aside.
  2. In a large bowl combine the flour, oats, baking soda and cinnamon.
  3. In a separate bowl mix the mashed banana, eggs, maple syrup, oil, prepared Diamond pro+ and vanilla extract. Add the dry ingredients and mix with a large spoon until just combined.
  4. Divide mixture evenly into muffin cups. Sprinkle the top with oats.
  5. Bake muffins for 20-25 minutes or until a skewer inserted into the middle of the muffin comes out clean.
  6. Place muffin tin on a cooling rack to cool. You might need to run a knife along the outer edge of the muffins to loosen them from the pan.

Hint: For extra sweetness or crunch you can add ⅓ cup sultanas or walnuts to the dry mix. They freeze well and it’s a great way to keep healthy snacks and breakfasts ready to go.
