This is a tested and approved pikelet recipe, and it never fails to deliver delicious fluffy pikelets. It’s also easy and fun for kids to join in the preparation during the Easter holidays. Hop to it!


  • 1 cup (150 g) of self-raising flour
  • 1⁄2 teaspoon of bicarbonate of soda
  • 3 level scoops of Diamond pro+ 3 Premium Toddler Milk Drink
  • 150 mL of water
  • 1 egg
  • 1 tablespoon of golden syrup
  • Zest of one orange
  • Extra virgin olive oil for the pan

Bunny decorations

You can decorate with pretty much any fresh fruit or even sweets.

  • Bananas, sliced through the centre for the bunny ears
  • Pretzel sticks for the bunny whiskers
  • Natural yoghurt and currents for the bunny eyes
  • Apple, peeled and cubed for the bunny teeth
  • Coloured chocolate buttons for the bunny nose
  • Pikelets for the bunny cheeks


  1. Sift self-raising flour and bicarbonate of soda into a medium-sized mixing bowl.
  2. In a separate bowl, whisk Diamond pro+ 3 and water until combined, then add egg, golden syrup, orange zest and whisk until combined.
  3. Then slowly add the wet ingredients into the dry ingredients, whisking as you do so to remove any lumps. The batter should be thick and smooth.
  4. Heat a non-stick frypan over medium heat, add a little extra virgin olive oil to prevent pikelets from sticking while cooking. After you have cooked the first batch of pikelets, the pan is well greased for the following batches.
  5. Drop heaped tablespoonful of the mixture for each pikelet into the pan and cook until bubbles appear on the surface (approximately 2 minutes).
  6. Then using a spatula, carefully turn over and cook the other side of the pikelet until lightly golden in colour (approximately 1–2 minutes). Transfer cooked pikelets to a plate and repeat with the remaining mixture
  7. Once the pikelets have been made, it’s time to create the bunnies. Arrange one pikelet in the centre of the plate. To make the cheeks, use an additional pikelet and using kitchen scissors cut out two smaller circles or with a mini circle cookie cutter. Add the banana ears and pretzel whiskers as shown. Add a dollop of natural yoghurt for the eyes, and then place a current on top. Arrange the diced apple for the teeth
