These pretty rice paper rolls are packed with fresh healthy and delicious ingredients. Toddlers will love to pick them up with their hands and if they’re old enough, get them involved in preparing them.
Makes about 12 Rolls
400 g firm tofu, sliced into 1 cm slices
1 tablespoon extra-virgin olive oil
12 rice paper wrappers
½ iceberg lettuce, shredded
1 red capsicum, sliced into small batons
2 carrots, sliced into small batons
2 cucumber sliced into small batons
50 g vermicelli rice noodles cooked according to package instructions
Sauce to serve, e.g. peanut, hoisin or sweet chilli sauce
Heat oil in pan and cook tofu on medium heat for 2 minutes on each side. Set aside.
Dampen a clean tea towel and put on a clean surface. Prepare rice wrappers, one at a time, according to instructions on the packet. Put re-hydrated rice wrapper on the damp towel.
Place a small handful of lettuce, 2 sticks of carrot, capsicum, and cucumber and a small handful of noodles in the middle of the wrapper. Top with a slice of tofu. The rice paper is very delicate, so don’t overfill.
