Makes 14

3 ½ cups Freedom Foods Rice Puffs

2 tablespoons cocoa

2 tablespoons Diamond pro+ Premium Toddler Milk Drink

60 g butter

20 g coconut oil

1 tablespoon sugar

1 tablespoon honey

1 tablespoon golden syrup

  1. Preheat oven to 120 degrees Celsius and arrange cupcake cases on a tray.
  2. Pour Freedom Foods Rice Puffs into a mixing bowl, add cocoa and Diamond pro+ Premium Toddler Milk Drink and mix well to combine.
  3. Gently melt together the butter, coconut oil, sugar, honey and golden syrup over a low heat until the sugars are dissolved and the mix becomes fluffy, stirring constantly.
  4. Slowly fold in the well-stirred, melted butter mix. Mix the Rice Puffs and butter mix together with a large spoon, so that all Puffs are touched by the butter mix. Don’t be concerned if the mix is loose – we want these to be loose, because this makes it easier for little fingers to break the Rice Puffs apart and eat them a little at a time.
  5. Gently spoon the mixture into cupcake cases, pressing and flattening the mix down evenly with a small teaspoon, then pop into the oven for 2-3 minutes. Be really careful not to let these stay in the oven any longer, as they burn super quickly.
  6. Remove from oven and allow to cool completely, then pop them in the fridge for an hour. These cocoa-cups are now ready to eat.
  7. Left overs may be stored in the fridge for a week or so.
