Makes 8 larger or 12 smaller scones

Ingredients

2 cups of self-raising flour (preferably wholemeal)

1 tablespoon sugar

30 g butter, chopped

Pinch of iodine salt

One serve of Diamond pro+ Premium Toddler Milk Drink, made according to instructions on the can

To serve

1 small container of thickened cream

A little premium quality jam

Directions

  1. Preheat oven to 190 degrees Celsius (fan-forced) and line a baking tray with baking paper, greased with a little olive oil.
  2. Sift the flour into a large bowl: if using wholemeal flour, add back the wholemeal bits that do not sift through.
  3. Add the sugar, salt and chopped butter. Rub the butter through the flour mix evenly, until this resembles fine breadcrumbs. Little ones really enjoying getting involved in this step.
  4. Prepare one serve of the Diamond pro+ Premium Toddler Milk Drink in a cup.
  5. Make a well in the centre of the flour and add the Diamond pro+. Using a large spoon, gradually draw the flour into the milk, gently combining it all into a soft, lumpy looking ball. Add a little more of the Diamond pro+ to pull in the flour, as needed.
  6. Spread some flour onto a clean surface, placing the scone mix on top and then gently knead the dough for 2 or so minutes. The scone mix will be ‘soft’ and a little sticky, but this is good as the scones will be super soft, which is nice for the little ones.
  7. Using a cup of scone cutter, dust the rim of the cup/cutter and cut out the scones. You may also need extra flour for your hands, so you can transfer the scones from your work surface to the baking tray. Use the remaining Diamond pro+ to brush over the top of each scone, to help the scones develop a lovely brown crust during baking.
  8. Pop the scones into the oven, for around 15 minutes. Keep an eye on them. As they develop a lovely brown crust, remove them from the oven.
  9. Meanwhile, whip the cream, so it is nice and think for dipping in pieces of scone. Have the jam nearby, to add a little to the scones and cream. Yum!

Sharing hint: these scones are intentionally larger, so grown-ups may share with their little ones. This provides a lovely ‘sharing’ education opportunity.

Nutrition hint: making old fashioned goodies like these with wholemeal flour is a good habit to cultivate. As the kiddies grow, they’ll learn to expect flour goods to have ‘bits’ in them.
